This past weekend was spent celebrating my fiance Burke’s (the guy above with the chicken wings) birthday, which of course included LOTS of food. He had been talking about wanting pancakes for a good two weeks, so I got up before work on his birthday and made him special pancakes. Not only were they delicious buttermilk pancakes, but I added in rainbow sprinkles and topped with a mound of whipped cream for some extra birthday specialness.
New year, new soup recipe! This recipe for Spicy Cauliflower Rice Soup took a bit of experimenting and I am so happy with the way it turned out. I knew I wanted to make something that had a little heat to warm me up in the dead of winter, but also something fairly healthy. The result was this tomato-based, vegetarian soup with a little kick.

Between my real job being hectic and the holiday season starting to ramp up, I just haven’t prioritized making recipes to put on the blog. More often than not, I overindulge on the weekends. Between Friday and Sunday, I had buffalo wings, beers, chinese, tacos and a few other treats. While I don’t feel bad about eating all that, I am all about balance in my diet. I crave healthier things after a few days of stuffing my face. It’s the most wonderful time of the year – and no, I don’t mean Christmas. It’s Halloween! Every year I look forward to this spooky season. I put up Halloween decorations, watch scary movies, and of course, make Halloween treats. This year, I’ve made Halloween Sprinkle Cookies.
