Greek Yogurt Chicken Salad
Prep Time: 10 Minutes
2 cups Rotisserie Chicken or Chicken Breast, shredded
½ Red Onion, diced
1 cup Red Grapes, cut in half
2 Celery Stalks, chopped
½ cup Carrot, grated
½ cup Cashews
½ cup Greek Yogurt, plain
1 tablespoon Lemon Juice
1 tablespoon Garlic Powder
Salt & Pepper
Whole Wheat Bread
In a large bowl, combine the shredded chicken, red onion, red grapes, celery, cashews, greek yogurt, garlic powder and lemon juice. Stir until fully combined. Salt and pepper to taste.
Make a sandwich by piling the chicken salad onto your bread slices and top with a piece of lettuce. Enjoy!
