Spiralized Beet Salad
1 Large Beet
2 Tablespoons Olive Oil
1 Tablespoon Lemon Juice
2 Tablespoons Crumbled Goat Cheese
4 Tablespoons Shelled Pistachios
Using a potato peeler, peel the skin off of a large beet. Using a spiralizer, handheld or a Kitchen Aid attachment version, spiralize the beet. In a large bowl, combine the olive oil, lemon juice, and beets. Sprinkle the crumbled goat cheese and shelled pistachios on top. Serve immediately.
