This may just be my favorite watermelon recipe I have ever made. As I was testing out the recipe and taking the photos for the blog, I just could not stop eating it. This Whipped Honey Ricotta Fruit Pizza is basically guilt-free, yet tastes really indulgent.
I call it a pizza but it is made up of fruit and cheese. The watermelon serves as the crust, while the whipped honey ricotta is sauce, and the fruit and mint are the toppings.
The whipped topping could not be easier. Just whip together ricotta cheese and honey for a really tasty treat. I was eating it by the spoonful but trying to save enough to go onto the watermelon.
Be sure to buy a seedless watermelon for this recipe. You won’t want to be picking seeds out as you are eating your Whipped Honey Ricotta Fruit Pizza.

Whipped Honey Ricotta Fruit Pizza
Prep Time: 10 minutes
1 Mini Seedless Watermelon, cut into slices
1 cup Ricotta Cheese
1 tablespoon Honey
Using a blender or mini food processor, combine the ricotta cheese and honey. Whip together until fully combined and smooth.
Place your watermelon slice on a flat surface, and spoon on two or three tablespoons of the ricotta mixture. Be sure to spread it out on the watermelon without getting too close to the rind of the melon.
Top with raspberries, pomegranate seeds and mint.
